A biocidal chemical known as Biocide GF is used in several industries, including winemaking, to effectively manage volatile acidity (VA). In wines and other fermented beverages, the term “volatile acidity” refers to the presence of volatile acids, primarily acetic acid. The final product’s stability and quality can suffer from excessive VA levels.
Acetic acid bacteria, which are in charge of producing acetic acid during fermentation, are especially targeted by Biocide GF in order to restrict their proliferation. By limiting the development of these bacteria, Biocide GF lowers the volatile acidity of the finished product by reducing acetic acid generation.
