An enzyme from the alpha amylase class that performs best at moderate or intermediate temperatures is referred to as a middle temperature alpha amylase. A class of enzymes known as alpha amylases is responsible for hydrolyzing starch and related carbohydrates into simpler molecules like dextrin’s and maltose.

The capacity to work efficiently within a narrow temperature range, often between 50 and 70 degrees Celsius, is what distinguishes intermediate temperature alpha amylase. Comparing this temperature range to other alpha amylases, which can be categorized as either low temperature or high temperature enzymes, we can say that it is moderate or intermediate.
